温度、pH值对南方大口鲶、长吻鮠蛋白酶和淀粉酶活力的影响
The Effect of Temperature and pH Value on Activiies of Proteases and Amylases from Silurus meridionalis and Leiocassis longirostris

本试验测得南方大口鲶胃内、胆汁和肠内pH分别为5.5~6.5,6.5~7.0,6.5~7.5,长吻鱼危胃内、胆汁和肠内pH值分别为5.0~6.5,6.5~7.0,6.0~7.0。南方大口鲶胃、胰脏和肠蛋白酶的最适pH值分别为2.6、6.2和7.0,淀粉酶最适pH值分别为5.0、6.4和7.0;蛋白酶最适温度分别为33、39℃和45℃,淀粉酶最适温度分别为45、39℃和41℃。长吻鱼危胃、胰脏和肠蛋白酶最适pH值分别为3.0、6.2和7.4,淀粉酶最适pH值分别为6.6、6.6和7.4;蛋白酶最适温度为39、36℃和41℃,淀粉酶最适温度分别为45、36℃和39℃。两种鱼胃内pH值较高,均高于胃蛋白酶的最适pH值。而肠内pH值范围适合蛋白酶和淀粉酶最大活性的作用。两种鱼蛋白酶、淀粉酶的最适温度均高于鱼体生活的水环境温度。两种鱼肠蛋白酶活力受温度变化的影响较大。

Abstract: The pH values of the gastric juice,the bile and the intestinal juice are 55~65,65~70 and 65~75 in silurus meridionalis respectively and 56~65,65~70 and 60~70 in Leiocassis longirostrisThe optimum pH values of stomach, pancreas and intestine for the protease are 26,62 and 70 respectively, and for the amylase are 50,64 and 70 in Silurus meridionalisIn Leiocassis longirostris, the optimum pH values of stomach, pancreas and intestine for the protease are 30,62 and 74,and for the amylase are 66,66 and 74. The optimum temperatures of stomach, pancreas and intestine for protease are 33,39℃and 45℃,and for amylase are 45, 39℃and 41℃ in Silurus meridionalis The optium temperatures of stomach, pancreas and intestine for the protease are 39, 36℃ and 41℃,and for the amylase are 45, 36℃ and 39℃ in Leiocassis longirostris These results indicate that the pH values of the gastric juice are higher than the optium pH values of the stomach protease in the two fishesAnd the pH values of the intestinal juice are conductive to the intestine digstive enzymes in the two fishes
